Fish Kibbee

makes about 15 balls



  • 1# fish(tilapia,haddock or any mild white fish)
  • 1 pkg. Jemila Kibbee Mix
  • 1 1/4 c water
  • zest of one orange(optional)
  • pinch of saffron(optional)
  • 1/3 c flour


  • 3 onions, diced
  • 1/3 c pinenuts, toasted
  • olive oil
  • salt
  • pinch of saffron(optional)


  1. Soak one package Jemila Kibbee Mix with 1 1/4c water, set aside.
  2. Cut fish into 1/2″ chunks.
  3. Place fish in food processor, process until paste like.
  4. Add kibbee mix, flour, orange and saffron to fish and process until mixed evenly.

Filling: Carmelize onions in olive oil, season with salt and saffron. When carmelized add in the toasted
pinenuts, remove from heat.

Assemble: Scoop 1/4 to 1/3c fish kibbee mixture into hand (wet hands with water to keep kibbee from
sticking) form into ball, pressing with fingers, hollow ball, fill with 1-2 teaspoons of filling, pinch closed.

Cook: Can be pan fried or deep fried until golden brown. Can bake in 425degree oven for 20
minutes(won’t be browned like frying).

Enjoy warm or at room temperature, eat plain or with tahini sauce.
